Add fresh spring peas to a simple mojito, and you won't have any problem filling your vegetable quota for the day. The muddled peas add an almost creamy texture to the cocktail, and there's just enough seltzer to make it slightly effervescent without being overpowered by bubbles. Mint and peas are a tried-and-true combination, and this rum drink—perfect for easing into warmer weather—is no exception.

Spring Pea Mojito

Recipe from the Tasting Table Test Kitchen

Yield: 1 cocktail

Prep Time: 5 minutes

Total Time: 5 minutes

Ingredients

1 tablespoon fresh peas, plus more for garnish

1 teaspoon sugar

8 mint leaves, plus 1 whole sprig for garnish

2 ounces white rum

¾ ounce fresh lime juice

¼ ounce simple syrup

Ice

2 ounces seltzer water, for topping

Directions

1. In a cocktail shaker, muddle the fresh peas with the sugar and mint leaves. Add the rum, lime juice and simple syrup. Fill the shaker with ice and shake vigorously until chilled.

2. Strain into an ice-filled Collins glass and top with the seltzer. Garnish with a skewer of peas and a mint sprig, then serve.
