Five-Spice Honey Syrup

Recipe adapted from Raul Yrastorza of Las Perlas

Yield: 2 cups

Cook Time: 15 minutes


1 tablespoon star anise

1 tablespoon fennel

1 tablespoon cardamom seeds

1 tablespoon cloves

1 cinnamon stick

2 cups honey

½ cup water


Combine all the ingredients in a saucepan and bring to a boil over medium heat. Reduce to a simmer and cook until reduced to 2 cups, about 15 minutes.
