What to Make with End-of-Summer Produce

Put all that corn and zucchini to good use while you still can

Summer is quickly coming to a close, and while we can’t do much to extend the season past September 22 in calendar days, you can rest assured we'll be keeping the spirit alive with the help of some of our favorite late-harvest produce—and the right Stand Mixer attachments from KitchenAid®. Here, we’ve rounded up some of our favorite August-to-September contenders to showcase the endless possibilities for the ultimate late-summer soiree.

It doesn’t get any more French than a classic ratatouille, a summer-centric vegetable dish that calls for a smattering of the season’s finest ingredients. We opt for a tian style approach for this one, slicing summer squash with the KitchenAid® Fresh Prep Slicer/Shredder Attachment, before layering them over sweet red onions. The slicing blade lets you prep directly into any bowl, making it the ultimate time-saver—so that dinner is on the table before summer squash is out of style.

Some things just go better together, and in this case, it’s grilled corn and summer squash—two of the season’s most prized farmers' market finds. To ensure success in this recipe, you’ll want to use thin sheets of zucchini—a job perfectly suited for the KitchenAid® Vegetable Sheet Cutter Attachment, which masterfully makes thin sheets of your favorite fruits or vegetables. Bonus: it works on fruits as well as vegetables, so you can easily add apple sheets as an extra layer of sweetness.
