Not feeling inspired by your usual dishes? Here's what's for dinner.

Some call milk "the perfect food," due to its fat, protein and sugar trifecta—and what is cheese if not milk you can chew? We've been known to make a meal out of a cheese plate, but you can empty out your dairy drawer and turn it into a three-course meal as well. For dinner tonight, pour a glass of wine, toast to the weekend and say cheese.

① Appetizer: Beer Cheese
They say cheese and crackers takes its toll, but that's a price we're willing to pay for beer-spiked spreadable cheese. If you'd like to add some vegetables into the fray, this dip makes a great hummus alternative for crudités.

② Main Course: Spiedino alla Romana
We didn't think grilled cheese could get any better—then we tried this Parmesan-battered version. The warm buffalo mozzarella and hidden bites of anchovies in chef Danny Amend's Italian sandwich make this the emperor of grilled cheese.

③ Dessert: Liquid Cheesecake
Low-patience bakers, rejoice: This is a cake that's supposed to be undercooked. Christina Tosi of Milk Bar fame shares her beloved recipe for a soft cheesecake that's begging to be eaten with a spoon.
