What Happens Behind The Scenes At A Chocolate Shop
How sea salt-topped chocolate-covered caramels get made, from start to finish
You don't have to wander down some side street in Paris to find quality handmade chocolate. Especially if you live in Boise, Idaho.
That's where we went behind the scenes with Matt Armato and Beau Ciolino of Probably This at 12 year-old dessert haven The Chocolat Bar.
"When it comes to chocolate, I like making it more, but Matt likes eating it more," Ciolino confides. Armato agrees. "What's not to love?" he says with a laugh.
Watch as the duo learns how to turn milk, cream, sugar and butter into golden caramels, with Boise chocolatier Chris Preston leading the way. After the candies set and a bladed rolling pin cuts them into squares, they get dipped into silky, tempered chocolate and sprinkled with flaky salt.
