They may not look like something you'd spread on a hot dog, but radishes are actually in the mustard family. Found in all shapes and sizes (rough-skinned black radishes, tubular daikon, etc.), they're beloved for the pop of color and crunch they add to dishes. However, tonight, give radishes the spotlight with these three recipes.

① Appetizer: Pickled Radishes

Red onions give this snack (and its versatile pickling liquid) a Barbie-pink hue. Start off your meal with a platter of these radishes paired with spicy mustard, crackers and Green Goddess dressing for dipping.

② Main Course: Root-to-Leaf Radish Spaghetti

"No scrap left behind" is the motto for this all-inclusive pasta dish. Ribbons of radish greens pepper the surface, while half moons of the bulb add bite. The two come together with a light garlic-infused sauce for a quick and easy weeknight meal.

③ Side Dish: Roasted Radishes and Marble Potatoes with Charred Onion Vinaigrette

This satisfying side has a trifecta of radishes: sliced, puréed and roasted. But the real star is the vinaigrette—broiled onions are whirred together with thyme and red wine vinegar for a smoky, sweet dressing.
