Rumor has it we're going to hit the great pumpkin shortage of 2015. But it's more than halfway through October and the supermarkets are flowing with pumpkin-spice everything, so get started on this ultra fall menu before the shortage hits.

① Appetizer: Pumpkin Salad with Whipped Goat Cheese, Kale and Radishes
You may be used to seeing pumpkin spiced with cinnamon and nutmeg, but cumin makes a convincing argument here to redefine "pumpkin spice." Plus, the light-as-air whipped goat cheese might become your new favorite sandwich spread.

② Main Course: Calabaza Hash
Calabaza is so similar to pumpkin in both taste and looks that it may as well be the gourd's doppelgänger. Oven-roasted potatoes and fragrant rosemary join it on the stovetop for a dinner-appropriate version of the breakfast favorite.

③ Dessert: Pumpkin Custards
