Broccoli Hearts With Sage Butter

Ingredients
- 5 broccoli stalks (florets reserved for another use)
- 6 tablespoons unsalted butter
- 8 sage leaves, finely chopped
- One-half of a fresh lemon
- Salt and pepper to taste
Directions
- Using a vegetable peeler, remove the tough outer layer from the broccoli until you are left with the translucent green hearts. Cut each heart into 2-inch pieces.
- Blanch the hearts in a large pot of salted boiling water until crisp-tender, about 3 minutes. In a large skillet, melt the butter and add the sage (reserving a pinch for the garnish). Add the broccoli and cook, stirring constantly, for 1 minute. Season with salt and pepper to taste. Transfer to a plate and drizzle with the butter sauce. Sprinkle with the reserved sage and a squeeze of lemon and serve.
