Total time: 30 minutes
  • Cookies
  • 1 cup Greek olive oil
  • ½ cup fresh orange juice, plus the zest of 1 orange
  • ¼ cup Metaxa brandy, a Greek spirit made from wine and brandy
  • ½ cup sugar
  • 3½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • 1 cup walnuts, chopped and toasted
  • Syrup
  • 1 cup sugar
  • 1 cup honey
  1. Preheat the oven to 325˚ and line a baking sheet with parchment paper.
  2. In the bowl of a standing mixer fitted with the paddle attachment, combine the olive oil with the orange juice, orange zest, brandy and sugar. Mix on medium for 2 minutes.
  3. In a bowl, whisk together the flour, baking powder, baking soda, cinnamon and cloves. Add to the orangejuice mixture and mix on medium speed until a dough forms.
  4. Form the dough into tablespoon-size disks and bake on the prepared baking sheet for 15 minutes, or until golden.
  5. While the cookies bake, make the syrup: In a small saucepan, bring the sugar, honey and 1 cup water to boil, then simmer for 5 minutes. Remove from the heat and let cool.
  6. Remove the cookies from the oven and let sit until just cool enough to handle. Add the cookies to the syrup and let them soak for 5 minutes.
  7. Transfer the cookies to a wire rack and sprinkle with the walnuts. Serve immediately.
