Ingredients

- 1 cup Greek olive oil
- ½ cup fresh orange juice, plus the zest of 1 orange
- ¼ cup Metaxa brandy, a Greek spirit made from wine and brandy
- ½ cup sugar
- 3½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon ground cloves
- 1 cup walnuts, chopped and toasted
- Syrup
- 1 cup sugar
- 1 cup honey
Directions
- Preheat the oven to 325˚ and line a baking sheet with parchment paper.
- In the bowl of a standing mixer fitted with the paddle attachment, combine the olive oil with the orange juice, orange zest, brandy and sugar. Mix on medium for 2 minutes.
- In a bowl, whisk together the flour, baking powder, baking soda, cinnamon and cloves. Add to the orangejuice mixture and mix on medium speed until a dough forms.
- Form the dough into tablespoon-size disks and bake on the prepared baking sheet for 15 minutes, or until golden.
- While the cookies bake, make the syrup: In a small saucepan, bring the sugar, honey and 1 cup water to boil, then simmer for 5 minutes. Remove from the heat and let cool.
- Remove the cookies from the oven and let sit until just cool enough to handle. Add the cookies to the syrup and let them soak for 5 minutes.
- Transfer the cookies to a wire rack and sprinkle with the walnuts. Serve immediately.
