Ingredients
  • 8 ounces shrimp, peeled and deveined
  • ½ cup of water, divided
  • 3 green chiles, roughly chopped, plus more to taste
  • 2 garlic cloves, roughly chopped
  • ¼ medium white onion, roughly chopped
  • 6 ounces tomatoes, roughly chopped
  • 3 to 4 tablespoons vegetable or olive oil
  • Salt
  • Beans or fresh tortillas, for serving
Directions
  1. Heat an ungreased skillet over medium heat. Add the shrimp and cook until the flesh is opaque. Remove and roughly chop.
  2. In a blender or food processor, combine ¼ cup of the water with the chiles, the garlic and the onion and blend well. Add the tomatoes and blend until well combined. Working in small amounts, add the shrimp and the remaining ¼ cup water, blending well after each addition until the mixture forms a paste. Add more water to release the blades of the blender if necessary.
  3. In a small skillet, heat the oil over low heat and add the salsa. Season with salt to taste and cook for about 8 minutes. Serve immediately over beans or fresh tortillas.
