Ingredients

  • 1⅔ cups sugar
  • 1⅔ cups flour
  • 1 tablespoon baking powder
  • 1½ teaspoons salt
  • 2 sticks unsalted butter, softened
  • ½ cup skim milk, divided
  • 2 large eggs
  • 1 cup finely grated, loosely packed lime zest
  • 1 tablespoon vanilla extract
  • 2 vanilla beans, scraped (or 2 additional tablespoons vanilla extract)
  • Juice of 4 limes (approximately ¼ cup)
  • 1 cup tequila

  • 1 cup shortening
  • ½ cup margarine
  • 4 cups confectioners' sugar
  • 2 tablespoons fresh lime juice
  • ¼ cup soy milk
  • Salt, for garnish
  • 12 lime wedges, for garnish
Directions
  1. Make the cupcakes: Preheat the oven to 350°. In a medium bowl, whisk together the sugar, flour, baking powder and salt. Add the butter and, using an electric handheld mixer or a standing mixer, mix at low speed until the butter is incorporated and the mixture has a mealy consistency. Add ¼ cup of the skim milk and mix slowly to form a paste.
  2. In a separate bowl, combine the eggs with the remaining ¼ cup of milk, the lime zest, the vanilla extract and vanilla seeds (if using). Slowly pour this mixture into the batter and mix at high speed just until incorporated, about 10 seconds.
  3. Fill a cupcake pan with liners. Fill the cups about onequarter full of batter and bake for 10 to 15 minutes, or until the tops are lightly golden. In a bowl, whisk together the lime juice and tequila. When the cupcakescome out of the oven, pour the lime-tequila mixture over the top to soak.
  4. Make the frosting: In a mixing bowl, combine theshortening and margarine and mix at high speed until smooth and fluffy. Beat in the confectioners' sugar at low speed, then beat in the lime juice and soy milk. Scrape down the bowl and mix at high speed until completely smooth.
  5. Cover each cupcake with a generous amount of frosting. Garnish each cupcake with a sprinkle of salt and a lime wedge and serve.
