Ingredients

  • Damiana Tonic Syrup
  • 2 cups water6 ounces dried damiana leaves3 ounces dried epazote leaves½ ounce dried gentianPeel of 2 large orangesPeel of 1 lemonPeel of 1 limeOne 2-inch piece fresh ginger, roughly chopped8 ounces organic agave nectar1 tablespoon vitamin C powder

  • 1½ ounces Ransom Old Tom gin
  • ½ ounce Domaine de Canton ginger liqueur
  • 3 ounces soda

Directions

  1. Make the syrup: In a small saucepan, combine the water, damiana, epazote, gentian, citrus peel and ginger and bring to a boil over medium-high heat. Reduce heat and simmer for 20 minutes. Strain the mixture through a coffee filter. Discard the solids and return the liquid to the saucepan. Add the agave nectar and return to medium heat; let the liquid reduce by one third. Remove the syrup from the heat. Add the vitamin C powder and let dissolve. Let cool and store in an air-tight container until ready for use.
  2. Make the cocktail: Fill a tall glass with ice. Add the gin, ginger liqueur and 1 ounce of the damianatonic syrup and stir well. Top with the soda, garnish with a lemon peel and serve.
