Ingredients
- 3 eggs
- ⅔ cup granulated sugar
- 1 vanilla bean, split and seeds scraped out
- ¾ cup crème fraîche
- ¾ cup milk
- ½ cup all-purpose flour, sifted
- Confectioners' sugar, for dusting
Directions
- Preheat the oven to 350°. In the bowl of a standing mixer with its whisk attached, add the eggs, sugar and vanilla-bean seeds. Whisk the mixture until smooth and the whisk leaves a short trail in the mixture when removed, about 5 minutes. Add the crème fraîche and milk and whisk until smooth. Add the flour and whisk until smooth.
- Pour into a greased 9-inch pie or baking dish. Bake until the edges have browned and the clafoutis has set, about 20 minutes. Dust with confectioners' sugar and serve warm or cool with the fruit of your choice.
