San Francisco bartender Erik Ellestad is working through every single cocktail in the Savoy cocktail book. This recipe is his variation on the book's recipe for a classic brandy smash.

Ingredients
  • Peel of ½ lemon
  • ½ teaspoon granulated sugar
  • Ice
  • Juice of ½ lemon
  • 2 ounces brandy
  • ½ teaspoon Small Hand Foods Gum Syrup
  • 3 to 4 mint leaves, plus 1 more for garnish
Directions
  1. In a heavy glass, muddle the lemon peel and sugar until fragrant. Add a splash of water and continue muddling until the sugar is dissolved. Fill with finely cracked ice. In a mixing glass, combine the lemon juice, brandy, gum syrup and mint leaves. Add ice and shake well, then strain into the glass with the muddled mint. Stir to combine, garnish with the mint sprig and serve.
