Gingras Extra-Old Apple Cider Vinaigrette from the Tasting Table Test Kitchen

Ingredients
  • ½ small shallot, finely chopped
  • 2 tablespoons Gingras extra-old apple cider vinegar
  • ½ teaspoon Dijon mustard
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 3 tablespoons grapeseed or canola oil
  • 1 teaspoon finely chopped herbs (such as basil, chives, fennel fronds, parsley, tarragon or thyme)
Directions
  1. In a medium bowl, add the shallot, vinegar, mustard, salt and pepper. Whisk to combine and slowly drizzle in the grapeseed oil to emulsify the vinaigrette. Add the tarragon and whisk; cover the bowl with plastic wrap and refrigerate until ready to use.
