A Tonic With Gin PER SE

This unique take harkens back to the original G&T, made with quinine powder instead of tonic water. This recipe was created for the opening of Thomas Keller's New York flagship, Per Se, in 2004.

Make the Tonic with Gin PER SE cocktail from Brian Van Flandern at the Clover Club in New York City.

Ingredients

  • 1½ ounces gin (preferably Junipero)
  • ½ ounce fresh Key lime juice
  • :::¾ ounce cane-sugar simple syrup (1:1 ratio):::
  • Pinch  raw quinine powder (order online at raintreenutrition.com)
  • Large ice cubes
  • 2¼ ounces sparkling water (preferably Welsh)
  • 1½ ounces fresh lime juice
  • Lime wedge

Directions

  1. In a cocktail shaker, combine the gin, Key lime juice, simple syrup and quinine powder and dry-shake. In a Collins glass, add the large ice cubes. Strain the gin mixture over the ice and top with the sparkling water. Stir once with a barspoon. Top with the regular lime juice, garnish with the lime wedge and serve.
