Reservations are necessary before heading to Midnight Cowboy Modeling School. The one-time brothel is now home to some of the best cocktails in Austin, offered up in a cheeky speakeasy setting. The bar is full of inside jokes: the buzzer to be admitted to the bar is labeled "Harry Craddock," for instance. Ingredients

  • ¼ ounce Dijon mustard
  • ¼ ounce honey
  • Paprika
  • 1½ ounces Balcones Baby Blue corn whiskey
  • ½ ounce lemon juice
  • Ice
  • 2 ounces ginger beer
  • Lemon wedge

Directions

  1. In a cocktail shaker, combine the mustard and the honey with a splash of hot water. Add a dash of paprika and stir. Add the whiskey, lemon juice and ice, and shake until chilled. Strain into a copper mug filled with ice and top with the ginger beer. Garnish with a lemon wedge dusted with paprika and serve.
