Onion Tart Cocktail Recipe From Todd Thrasher

A caramelized onion tart inspired the ever-creative cocktail genius Todd Thrasher to develop this kicky concoction for Society Fair. Ingredients
  • Onion mix
  • 1 white onion, thinly sliced
  • ¼ cup granulated sugar
  • 2 tablespoons fresh thyme leaves, roughly chopped
  • 1 bottle of dry Riesling
  •  
  • Cocktail
  • Ice
  • 1 ounce white rum
  • ½ ounce Dolin blanc vermouth
  • Squeeze of lemon
  • Dash of lemon bitters
Optional Ingredients
  • Bacon cracker (optional)
Directions
  1. Make the onion mix: In a wide, shallow pot set over very low heat, add the onion. Cover and cook, stirring occasionally, until translucent, about 30 minutes. Add sugar and thyme. Cover and cook, stirring occasionally, for another 30 minutes. Add the Riesling and let simmer for 30 minutes. (Do not let the liquid reduce.) Remove from heat and pour the mixture into a fine-mesh sieve set over a bowl. Discard solids. Refrigerate the liquid until chilled.
  2. Make the cocktail: In a cocktail shaker or mixing glass filled with ice, combine the rum, vermouth, 1½ ounces of the prepared onion mix, lemon juice and bitters. Stir, then double-strain into a martini glass. Garnish with a bacon cracker, if desired. Serve.
