A celery and tequila cocktail.

Ingredients
  • Celery-seed syrup1 cup water1 cup granulated sugar¼ cup celery seeds
  • CocktailIce2 ounces blanco tequila¾ ounce fresh lime juiceDash celery bitters1 ounce club sodaLime wedge, for garnish
Directions
  1. Make the syrup: In a small saucepan, bring the water to a boil. In a heat-safe bowl, whisk the boiling water, sugar and celery seeds until the sugar is dissolved. Set aside at room temperature until cool, about 25 minutes. Set a fine-mesh sieve over a medium bowl and strain the celery seed syrup, discarding the celery seeds. Refrigerate in an airtight container until chilled, at least 2 hours or up to 2 weeks.
  2. In a cocktail shaker filled with ice, add the tequila, lime juice, celery bitters and ¾ ounce celery-seed syrup. Cover and shake well, then strain into an ice-filled double old-fashioned glass. Top with the club soda and stir to combine. Garnish with the lime wedge and serve.
