Having A Cocchi With You

This riff on a Pimm's Cup is low alcohol and perfect for brunch.

Ingredients
  • Two ¼-inch-thick wheels of cucumber, plus one more for garnish
  • 6 mint leaves, plus a mint sprig for garnish
  • ½ ounce Meyer lemon juice
  • 2 ounces Cocchi Rosa
  • ½ ounce absinthe
  • Ice
  • Soda water
Directions
  1. In a cocktail shaker, add two of the cucumber wheels, the mint leaves and lemon juice, and muddle well. Add the Cocchi Rosa and the absinthe. Fill the shaker with ice and shake well. Pour the contents of the shaker into a Collins glass and top with soda water. Garnish with the remaining cucumber wheel and the mint sprig, and serve with a straw.
