  • :::For the Yogurt:½ cup whole-fat yogurt1 teaspoon olive oil½ teaspoon kosher salt1 teaspoon fresh lime juice½ cup cilantro leaves, finely choppedFor the Lamb Tartare:½ pound boneless top round lamb, cut into ¼-inch pieces1 tablespoon olive oil½ teaspoon ground coriander½ teaspoon chili powder1 teaspoon ground cumin½ teaspoon kosher saltZest of 1 lime1 tablespoon finely chopped cilantro stems1 teaspoon gluten-free tamari2 tablespoons finely diced celery1 tablespoon finely diced shallotsUdi's Gluten Free Simply Sea Salt Ancient Grain Crisps:::
Directions
  1. Make the yogurt sauce: In a small mixing bowl, combine all of the ingredients. Set aside.
  2. Make the lamb tartare: In a separate bowl, combine all of the ingredients, except the crisps, and mix together with a metal spoon.
  3. To assemble, spread 1 tablespoon of the lamb tartare onto an Udi's Gluten Free Simply Sea Salt Ancient Grain Crisp, then top with ½ teaspoon of the yogurt mixture. Repeat with the remaining tartare, Udi's Sea Salt Ancient Grain Crisps and yogurt sauce. And serve.
