Ingredients
- One 750-milliliter bottle red wine
- 10 garlic cloves, smashed
- ½ cup granulated sugar
- ¼ cup kosher salt
- 1 teaspoon whole coriander seeds, toasted
- ½ teaspoon smoked paprika
- ¼ teaspoon red pepper flakes
- 2 thyme sprigs
- 1 oregano sprig
- 1 cinnamon stick
- 1 star anise
Directions
- In a medium saucepan, combine all the ingredients. Bring to a simmer over medium-high heat and cook until aromatic, 5 minutes. Remove from the heat and let cool completely before adding meat to marinate in a sealable bag for up to 24 hours.
