Craft Your Menu, Starting with the Drink

This unique Gentleman Jack cocktail features bitters, which are highly concentrated extracts that add a punch of flavor. And the beauty of going to extra step and making your own is that you can infuse them with whatever you're in the mood for: like cherries, vanilla and cinnamon.

How to Make It: For the cherry bitters, combine 1½ cups of cherries (or ¾ cup dried cherries), 1 cup of 151-proof neutral grain spirit, 1 crushed whole star anise, 1 teaspoon of fennel seeds, the seeds from 1 vanilla bean, 3 whole cinnamon sticks, 2 crushed cardamom pods, 1 teaspoon of gentian root and 1 teaspoon of brown sugar in a glass vessel. Let infuse for 6 weeks. To make the cocktail, add 2 ounces of Gentleman Jack, 1 ounce of sweet vermouth and 3 dashes of cherry bitters in a mixing glass, and fill with ice. Stir for 7 seconds and strain into a coupe glass. Garnish with a Luxardo cherry and ribboned orange peel, and serve.
