Chicken and rice gets a makeover

From arroz con pollo to brothy, comforting soups, chicken and rice go together like, well, white (meat) on rice.

Our Test Kitchen gave the weeknight staple a twist with hearty Wehani whole grains for this Pulled Chicken with Red Rice (see the recipe).

The chicken is gently poached in a broth bolstered with mirepoix, cilantro and chiles, then shredded and mixed into the cooked rice and topped with fresh thyme, sage and cilantro.

This will likely all disappear quickly, but if you've got leftovers, roll them in a tortilla for a quick chicken burrito.
