Purple Kale Kitchenworks' Provisions have you covered

Ronna Welsh of Purple Kale Kitchenworks doesn't want to cook your Thanksgiving turkey, apple tart or holiday gingersnaps.

But the restaurant-kitchen veteran does want to help you cook for yourself, your friends and your family.

With the launch of her Provisions line, Welsh is offering the building blocks of a proper Thanksgiving meal (click here to order).

There's herbed and spiced brine ($4.50 a quart) and rich poultry stock carrying the aromatics of cardamom and cloves ($7.75 a quart). Along with a dried-wild-mushroom stock ($13.75 a quart), she also makes the affectionately named "mud stock," which is loaded with the flavorful ghosts of potato peels, mung beans and carrots ($7 a quart).

Green-peppercorn butter ($8 for half a pound) is perfect lavished on turkey, slathered on mashed potatoes or spread thickly on crackers with smoked salmon for a cook's Thanksgiving morning snack.

Discs of pâte brisée ($10), enough for two single-crust pies, bake up into airy layers, while spiced gingersnap-cookie dough ($13.50 for 15 cookies) is rolled, sugared and ready to bake.

These are all mainstay pantry items, but the quality is unlike anything we've found on even the fanciest store's shelves. But act quickly: All orders are due by tomorrow, Saturday, November 19 by noon.

Orders can be picked up at Purple Kale Kitchenworks at the Everybody Eats kitchen (294 Third Ave. at Carroll St., Brooklyn; purplekale.com) on Monday, November 21, from 10 a.m. to 2 p.m. and from 5 to 8 p.m.

Delivery on Tuesday, November 22, from 4 to 7 p.m. is free in Brooklyn for orders of $50 or more.
