2 lightly smashed garlic cloves
1 sprig fresh rosemary
1 sprig fresh thyme
Pinch caraway seeds
⅓ cup beef broth or stock
½ medium white onion, finely chopped
3 tablespoons apple cider vinegar
2 teaspoons sunflower oil
1 teaspoon extra-virgin olive oil
1 teaspoon tarragon mustard (moutarde à l?estragon) or 1 teaspoon dijon mustard plus ½ teaspoon finely chopped fresh tarragon leaves
Freshly grated nutmeg
Finely ground white pepper
Finely chopped fresh chives
