Las Vegas's latest hotel is a food-lover's paradise

Abandon all memories of the local mall's food court: The Cosmopolitan, a much-anticipated hotel opening today in Las Vegas, has blown up the concept in true Sin City fashion.

Nestled on more than eight acres of grounds on the Strip, the ultraluxe hotel boasts multiple pools, a giant casino and every other imaginable amenity. But our real interest lies on the third floor, where a collective of top-tier culinary talent–from Los Angeles's David Myers to D.C.'s Jose Andres–has set up a desert post.

To guide you through this wonderland of food, we've put together a hypothetical crawl (see map) of remiss-to-miss dishes. Start your engines:

1) Jaleo Begin your evening over classic gambas al ajillos–rich, garlicky shrimp that chef Jose Andres made famous when he opened the original Jaleo outpost in Washington, D.C.

2) Blue Ribbon Sushi Bar & Grill Head next door for sake cocktails and an indulgent maki roll featuring chunks of lobster, shiso and black caviar.

3) Estiatorio Milos This New York transplant is known for its selection of hyperfresh seafood, including whole fish grilled over charcoal. But to save room for the dishes ahead, go with our favorite appetizer: superthin slices of pan-fried zucchini, eggplant and saganaki cheese.

4) Scarpetta All hail to the pasta king, Scott Conant. Here, he shows a deft hand with fettuccine, pinned to the earth with roasted garlic, mushrooms and escarole.

5) Comme Ça David Myers's beloved French bistro satisfies urges for buttery escargot and onion soup, but the tableside cote du boeuf for two makes for a worthy splurge after getting lucky at the craps tables.

6) S.T.K. Dress up any piece of steak–from 6 to 36 ounces–with any number of additions to taste, from classic peppercorn to foie gras butter.

7) D.O.C.G. This Italianate homage to wine country is the ideal place to end your evening with a glass of wine paired with a selection of regional cheeses.
