Your Sponge Candy Relies Heavily On One Make-Or-Break Ingredient

Sponge candy is often confused with honeycomb toffee or nut brittle, as they all use sugar, corn syrup, and baking soda. However, gelatin is what sets sponge candy apart.
The addition of gelatin before baking soda allows the sugary foundation to trap more of the escaping bubbles. This results in uniformly small bubbles packed tightly together.
The even dispersal of tiny air bubbles throughout sponge candy gives it an even lighter texture and greater thickness, for a bubbly, light, and shatteringly crunchy result.
