Your Grocery Store Probably Doesn't Carry One Underrated Cut Of Beef
BY Michelle Welsch
The lean teres major is an underrated cut of beef you're unlikely to spot at your local market. It's a "butcher's steak," meaning an experienced hand is needed to find and cut it.
Such other specialty cuts are mostly pricey, but the teres major, a part of the shoulder meat, is rather affordable and serves as a nice alternative to tenderloin and filet mignon.
The juicy, beefy, and easy-to-handle cut is ideal for assembling kabobs for the grill or dinner plates packed with veggies and rice. Air-frying it makes for a tasty main for lunch.
You may struggle to find this steak (a.k.a. petite tender) pre-cut at your local grocery store, but professional butchers will know exactly what you need. Or, you can shop online.
