To melt your cheese without burning everything, don't make the mistake of not covering your frying pan with a lid. This simple step will trap heat and steam as your sandwich cooks.
For crispy edges, brush each side of the bread with a generous layer of mayonnaise. It has a higher smoke point and will stand up well to heat, crisping without burning it.
