James Beard-nominated chef and author Jean-Pierre suggests Kosher salt for dry brining prime rib, as it soaks deep into the meat more effectively than a coarser grain salt.
In the case of seasoning a big honkin' prime rib, the more briny, savory flavor the meat can absorb during the dry brining time, the better the results will be.
