You Need To Try The 'Butcher's Cut' Of Beef When You Get A Chance

Merlot steak, often described as a better-kept secret of the culinary world, is a cut of beef you can only get from a local butcher by specifically asking for a "butcher's cut."
As chef, restaurateur, and Certified Angus Beef Chef Ambassador K.C. Gulbro told us, "The Merlot steak comes from the cow's upper leg, an area not typically known for its steaks."
"This rare, flavorful gem is often called a 'butcher's cut' because butchers usually keep these for themselves," he added. A cow only has two of these cuts, so it's highly coveted.
Coming from well-exercised legs, it's like a finer-grained flank steak but beefier. Yet, it's nothing like a cut from a working muscle and is, in fact, tender and rich in flavor.
