Angel hair pasta or capellini is thinner than any other kind of Italian pasta, and while these extremely fine noodles can be delicious, they're also easy to mess up.
Angel hair pasta is best al dente, but it’s so easy to overcook it that it's better to order a different pasta at a restaurant, lest you end up with a plate of mush.
Chefs who don't pay close attention can miss the mark of al dente, making the noodles mushy. This effect is worsened if the pasta is served with heavier sauces like bolognese.
