You Don't Need A Blender To Mix A Daiquiri The Classic Way
By MATTHEW SPINA
Ice is essential for a daiquiri's smooth texture and bright flavor, but you don't have to blend ice cubes into the drink. For a classic daiquiri, you only need a cocktail shaker.
Not all daiquiris need to be frozen. When shaken in a cocktail shaker with the other ingredients, ice acts as an agitator that cools the drink and "blends" the components together.
Proper daiquiris have a light, pillowy-smooth texture and a frothy topping of bubbles achieved through aeration and emulsification, which a cocktail shaker achieves perfectly.
Aeration is the addition of air into the drink, which occurs when shaking, and emulsification is how the liquids combine into a smooth, uniform drink full of body and flavor.
