Why You Should Stop Throwing Out The Oil From Your Empty Sun-Dried Tomato Jar

Once you’ve used up all your sun-dried tomatoes, don’t throw the container away. The oil that the tomatoes were preserved in can be repurposed in many delicious ways.
The leftover oil has a deeply savory and tart taste. Since many brands also fill their jars with herbs, spices, and garlic, your oil may have even more depth of flavor.
The oil can be mixed with red or white wine vinegar or balsamic vinegar for a salad dressing, or it can be used alone as a dip for your favorite crusty bread.
Store olives or fresh cheese in the oil to soak up the flavor, or use it as a topping or flavoring in baba ganoush, whipped feta dip, hummus, aioli, pizza, and pasta.
You can also use your sundried tomato oil to cook veggies, omelets, or risotto. The only way you can go wrong is if you throw out the jar before using up all that oil.
