TikTok star and Forbes 30 Under 30 chef, Eitan Bernath’s simple recipe for roasted potatoes is sure to be a crowd-pleaser — and it might even change your mind about the contentious condiment.
To make roasted potatoes, Eitan Bernath generously seasons his potatoes with dried spices and fresh parsley and then slathers the seasoned potatoes in mayo before tossing them in the oven. The result is a perfectly cooked potato with a crispy exterior and soft center, leading Bernath to predict that this will be everyone’s “new favorite cooking hack.”
Eitan Bernath isn’t alone, and according to Meathead Goldwyn, “[Mayo] sticks really well to the food, helps release food from the hot grill surface, and gets a beautiful golden color,” making it a perfect marinade. Scientifically, mayo has protein and a high-fat content, meaning it acts as a shield when faced with high heat, creating perfectly crispy food without any char.
