Why You Should Keep Your Pumpkin Pie In The Oven After It's Done

Pumpkin pie is one of the great pies in America’s holiday catalog. Contrary to popular practice, it should be left to cool in the oven instead of the counter or windowsill.
Like cheesecake, pumpkin pie is susceptible to breakage. There is a drastic temperature change between the oven and the counter, which can cool the pie too quickly and crack it.
Cooling the pie in the oven is a much gentler process. Simply turn off the oven when the pie is done baking, which will cool the pie’s internal temperature at a much slower rate.
The whole cooling process should take between 20 and 30 minutes. By then, it should be cooled enough to come out and be safely left out on the counter.
