Why You Should Always Keep Canned Carrots In Your Pantry
BY JENNIFER SWEENIE
Canned vegetables are convenient, cheap, and have as many or almost as many nutrients as their fresh counterparts. Canned carrots are particularly versatile and nutritious.
Canned carrots have lots of antioxidants, which are brought out when heated during the canning process. Beta-carotene is one of these, and can be good for skin and eye health.
Just like fresh carrots, canned carrots can be roasted in the oven, air-fried, or sautéed. They can be also used in a stew, made into carrot soup, or even blended into a smoothie.
Recipes that call for grated carrots will not work, since canned carrots are softer and don't hold their shape as well, but they work great for recipes that need carrot purée.
