Why You Should Add Fruit To Your Vampiros Tacos
By JESSIE MOLLOY
Tacos vampiros, or vampire tacos — which may have been named because they once contained lots of garlic — are made with corn tortillas griddled fresh to order with a thick layer of cheese, then topped with other ingredients. There are a few ways to erve these tacos, but it's possible that any tacos vampiros will be better with fruit.
Some recipes serve tacos vampiros like a sort of open-face quesadilla, while other recipes call for cooking a cheese quesadilla and wrapping it around the fillings. To finish it off, MasterClass says that "acidic fruit additions, like orange juice, lime juice, or pomegranate arils, add a bright flavor to contrast the richness of the meat and cheese."
You can incorporate fruit into your tacos vampiros is by using a fruit juice marinade on your choice of meat, or simply add the fresh fruit as a garnish. You can also add pomegranate and mango into the dish by creating a fruity guacamole to be served as a topping, which would complement the heat of the seasonings in the tacos.
