Why Steak And Gorgonzola Cheese Are The Ultimate Flavor Pairing

An Italian blue cheese called Gorgonzola makes the perfect pairing for a savory steak. That’s because this cheese offers a mellow, earthy flavor with a nutty aroma.
Savory steak and funky Gorgonzola are both rich in umami, and the cheese is pungent and tangy. It makes the steak taste much meatier, but also cuts its richness a bit.
The variety called Gorgonzola piccante is best for crumbling due to its drier texture, whereas smooth Gorgonzola dolce lends itself better to melting, including in a sauce.
Pair Gorgonzola with steak by crumbling it over a cooked filet or adding it to a side dish, or try encrusting the meat with bits of blue cheese before cooking it in a cast iron skillet.
Create a sauce by whisking a few ounces of the cheese with a splash of Worcestershire sauce, a spoonful of Dijon, and sauteed mushrooms, before simmering and reducing.
You can also make a salad dressing by mixing the cheese with sour cream and a hint of lemon juice, or mix butter with fresh herbs, lemon zest, and your choice of Gorgonzola.
