Why Pistachios Are One Of The Few Nuts Served In Shells
BY MICHELLE WELSCH
Pistachios are often sold in their shells because, unlike other nuts, they naturally split the shells they grow in, leaving the nut exposed and more easily accessed.
The shells split about 30 days before the nuts are harvested. The nuts and shells are then washed, dried, and sorted, ensuring the product is clean and high-quality.
Although the extra effort of deshelling may be an inconvenience to some, pistachios are well worth the work. Plus, deshelling offers a natural pause so you don’t overeat.
