According to her YouTube channel, Martha Stewart has a drawer dedicated to milk, dark, semi-sweet, and sweet variations of chocolate to help make baking a breeze.
Unless you have a humidity-controlled refrigerator, storing chocolate in the fridge creates a breeding ground for moisture, which is why Stewart stores it at room temperature.
Storing chocolate at room temperature keeps it away from heat and moisture, both of which could potentially damage the integrity of this ingredient.
If you take off the wrapping and your chocolate looks like it’s covered in some type of white coating, this is a sign that your chocolate has experienced fat bloom or sugar bloom.
Stewart’s designated storage drawer frees it from these hazards. It also ensures the chocolate doesn't absorb odors from other ingredients, which it can do easily.
