Why Is It Safe To Eat Raw Steak Tartare?

While meat is usually cooked at around 160 degrees Fahrenheit to eliminate bacteria like E. coli, steak tartare is a raw beef dish.
The raw nature of tartare means there's no heat to kill bacteria, but using high-quality beef can ensure there's no contamination.
You must store the meat at 40 degrees Fahrenheit or below to inhibit bacterial growth. Avoid cross-contamination by keeping it away from other raw ingredients.
At restaurants, it's usually prepared at a separate station, where the knives, cutting board, and other utensils are properly sanitized.
Finally, it's also important to serve the dish as soon as it's prepared to minimize the time for the bacteria to develop at room temperature.
