Why Is It Called Chicken Fried Steak If It's Made With Beef?

Some foods are named after animals that have no role in the dish, such as Rocky Mountain oysters and chicken-fried steak. This is why this Southern beef dish has such an odd name.
Chicken-fried steak is steak that is prepared using the same method as fried chicken, making it "chicken-fried." It's usually made with a cheaper cut like cube or round steak.
The meat is tenderized, dipped in an egg batter, coated with seasoned flour, and deep-fried to a golden brown. It's then served with creamy, pepper-flecked white gravy on the side.
Chicken-fried steak is often found at breakfast with eggs and biscuits or hashbrowns. It can also be served for dinner with sides like mashed potatoes and collard greens.
