Why Chefs Grab Hot Pans With Towels Instead Of Oven Mitts

You may have noticed that professional chefs move dishes in and out of the oven while holding a towel rather than using mitts. It turns out there are several reasons why.
A towel folded over itself multiple times provides cooks with the sense of touch needed to retain control of their tools while also shielding skin from the heat.
Most people don’t regularly launder their oven mitts but towels will immediately get washed after use. The accumulation that builds up on mitts can actually pose a health hazard.
An exceptionally dirty oven mitt, particularly one that's been saturated in cooking oil, grease, or some other fat, is also hazardous as it could spark a kitchen fire.
