Why Cheese Can Potentially Be A Red Flag At Mexican Restaurants

While there are many Mexican restaurants around the U.S., not all are true to Mexican traditions. One red flag to look out for to identify these places is the use of cheese.
Traditional Mexican cuisine only uses various native types of cheese, and uses them sparingly. So, watch out for the type of cheese used along with the dish in which it's used.
If your enchiladas, tacos, beans, or tostadas are smothered in melted cheese or sprinkled with shredded cheddar or Monterey jack, you're potentially eating Mexican-American food.
While some dishes in Mexico are filled with cheese, it's never melted cheese. Even cheesy dishes like quesadillas use cheeses native to Mexico, almost all of which are white.
