Whip Out The Tortilla Press For Flatter, Even Chicken Cutlets
By MELISSA CORBIN
Traditionally, a meat mallet is used to pound chicken breasts flat, creating evenly-shaped cutlets and allowing seasonings and marinades to penetrate better.
However, a tortilla press is an easier alternative. A press is less likely to splatter bacteria from the raw meat on kitchen surfaces, and won't beat the chicken to a pulp.
Use some plastic storage bags to line the press to reduce the spread of bacteria. This also keeps the chicken from sticking to the press.
From there, cut the chicken breasts in half and place one in the center of the press. With one firm squeeze of the press, you have a no-mess, no-fuss flattened chicken cutlet.
