Fish and chips is a simple dish, but there are countless ways to dress it up; some folks love to add ketchup or a side of mushy peas, while others prefer tartar sauce, gravy, or even mint sauce. One classic accompaniment is vinegar, and there's one type in particular that is the best partner for fish and chips.
Any kind of vinegar can cut through the rich and crunchy coating of fish and chips while also balancing out the salt, but barley-based malt vinegar is the best choice to enhance this dish. Malt vinegar has a sweeter, less pungent flavor than other vinegars, and adds a nutty, toasty taste to crispy fried foods.
Malt vinegar can also perk up tons of other recipes, from salad dressings to pickles. Home cooks who are in a pinch or simply don't want to splurge on a bottle of malt vinegar can use apple cider vinegar or lemon juice instead; both of these have some notes of caramel and lemon common to malt vinegar.
