What To Keep An Eye For When Buying Fresh Whole Cauliflower

When picking out a head of cauliflower, there are a few things to pay attention to in order to buy the best one possible. First, look for an even, slightly off-white color.
Avoid any heads that have bruises or brown spots. The leaves should be green, and the florets, or the white tops of the vegetable, shouldn’t have any gaps or holes.
Once you've found a head of cauliflower that looks appealing, lightly touch it to make sure there aren't any soft or wet spots, and that its stem feels firm and dense.
The cauliflower shouldn’t have much of a scent, so put it back if it smells unpleasant. After purchasing a head, store it in plastic and keep it in the fridge for up to a week.
