What Makes French Lentils Different From The Other Types?
By HALDAN KIRSCH
Different mushrooms serve different purposes, and different shapes of pasta work best in different dishes. Lentils are the same way, and you cannot swap green lentils for red or brown ones.
French lentils are a kind of green lentil known for their durable nature and complex flavor profile, providing a more pronounced, peppery bite. Also known as Lentilles du Puy or Puy lentils, French lentils provide a slightly different flavor due to growing in volcanic soil in the Puy region of France.
They hold their shape and texture better than other types of lentils, so they make a great addition to salads or soups, and they won’t be reduced to mush after cooking. Additionally, French lentils have around twice as many calories, carbohydrates, and protein as other green lentils, making them an excellent source of plant-based nutrition.
